Japanese Blue steel is an exceptionally high quality cutting steel. Its a very 'pure' steel with very regular grain and few impurities, it provides very high cutting edge performance and edge retention. The reason it is called 'Blue' steel is not because of its colour, but because it was delivered from the foundry wrapped in Blue paper (hence its truer name 'Blue Paper steel) this was only to differentiate it from the slightly less pure 'White' steel which was wrapped in White paper
